Thai Rice Salad
1 oz sesame oil
20 oz rice
40 oz vegetable stock
1 T curry
2 tsp salt
1 bunch cilantro
1 red pepper
1 pineapple
2 oz chili garlic sauce
2 oz lime juice
2 oz olive oil
1. Cook rice in sesame oil with curry, salt,
and vegetable stock at a simmer for 15
minutes or until all stock is absorbed into
rice, keep covered with a lid
2. Cool rice
3. Chop cilantro, dice pineapple to small
cubes. dice red pepper as well
4. Mix with rice
5. Add rest and blend well
6. Served chilled as a salad, or hot as an
entree side dish
(caution spicy!)
